Tips for Juicy Pan-Seared Chicken

Use a meat thermometer
Pull at 160°F / 71°C; carryover heat brings it to the safe 165°F / 74°C during resting. This single step prevents overcooking more than anything else.

Pound to even thickness
Chicken breasts are thicker on one end. Pound or halve them horizontally to an even ¾ inch so the thin end doesn't overcook before the thick end is done.
